Ham and Pineapple Wrap


Ingredients:
4 8 inch flour tortillas
4 tablespoons of pineapple cream cheese
3 ounces of thinly sliced, low-fat ham
4 scallions, finely chopped
1 cup of shredded lettuce

Instructions:
Spread the tortillas out on a clean work surface. Divide the cream cheese evenly among the tortillas and spread evenly. Cover as much of the tortilla as possible. Lay the ham slices on top of the cream cheese. Sprinkle with the scallions and lettuce. Roll the tortilla up tightly to create a log looking shape. Wrap tightly in saran wrap and refrigerate for up to 12 hours. Just before serving, cut the wrap in half crosswise, slightly diagonal.

American Style Pot Roast


Ingredients:
Cooking spray
1 (4-pound) boned rump roast
6 cups (1/4-inch-thick) sliced onions
2 tablespoons Hungarian sweet paprika
3 cloves of crushed garlic
1/2 cup of water
2 tablespoons red wine vinegar
1/2 teaspoon of dried basil
1/2 teaspoon of dried oregano
1/2 teaspoon of dried thyme
1 (14-1/4-ounce) can of low-salt beef broth
6 small red potatoes
1/2 teaspoon of salt
1/4 teaspoon of black pepper
6 carrots, cut into 1-1/2-inch-thick pieces

Instructions:
Preheat oven to 300 degrees. Coat a Dutch oven with cooking spray and place over medium-high heat until hot. Add roast and brown it on all sides. Remove from the pan and reduce heat to medium. Add onions and sauté them for 10 minutes. Add paprika, basil, oregano, thyme, and garlic and sauté for 1 minute. Add water, wine, and broth and bring it to a boil. Stir in salt, pepper, carrots, and potatoes (Peel a 1/2-inch strip around each potato prior to adding them). Return the roast to the pan. Cover and bake at 300 degrees for 2 hours. Turn the roast, re-cover and bake an additional hour or until tender. Serve with vegetables and broth.
