Glazed Sweet Potatoes
Ingredients:
Cooking spray
1 pound of sweet potatoes, peeled
1 tablespoon of cornstarch
2 tablespoons of lemon juice
3/4 cup of orange juice
1 tablespoon of brown sugar
Instructions:
Preheat the oven to 425 degrees. Cut the sweet potatoes into ½ inch thick slices.
Place the potatoes in a 1-quart casserole dish coated with cooking spray. Combine cornstarch,
lemon juice, orange juice and brown sugar in a bowl and stir well. Pour mixture over the potatoes. Bake covered at 425 degrees for 45 minutes or until potatoes are tender.

Baked Macaroni and Cheese
Ingredients:
6 ounces of uncooked Elbow macaroni
Cooking spray
1 teaspoon of vegetable oil
1 cup of chopped onions
1 cup of chopped green bell peppers
1 cup (4 oz) of shredded reduced-fat cheddar cheese
1 (4 oz) can of sliced mushrooms, drained
1 (2 oz) jar of diced pimientos, undrained
1 cup of cornflakes cereal, crushed
1 cup of fat-free mayonnaise
1/4 teaspoon pepper
1 (10 3/4 ounce) can reduced-fat, reduced-sodium Cream of celery soup, undiluted
Instructions:
Preheat your oven to 350 degrees. Cook the Elbow macaroni according to package directions,
omitting salt and fat and then drain. Rinse the macaroni under cold water and drain well. Set aside. Coat a large nonstick skillet with cooking spray and add the vegetable oil. Place over medium heat until hot. Add the onions and bell peppers. Sauté until they are tender. Next, combine sautéed vegetables, cheese, macaroni, and the next 5 ingredients
into a large bowl and stir well. Spoon into a 2-quart casserole dish, coated with cooking
spray. Sprinkle crushed cereal over the finished mixture and put it into the oven. Bake, uncovered, at 350 degrees for 40 minutes.
