Light Pasta Salad
Ingredients:
1 large red or green pepper, chopped
1/3 cup of chopped onions
4 oz. part-skim mozzarella cheese, grated
1 10 oz. package of Rotini pasta
1½ cups of broccoli, cut into florets
1 15 oz. can of red kidney beans, drained and rinsed
1 2 oz. can of chopped ripe olives
1 large carrot, diced
8 oz. of lean roast beef, cooked and cut into Julienne strips
2/3 cup low-calorie Italian dressing
Instructions:
Cook the pasta according to directions on the box or bag. Once pasta is cooked, drain and rinse it with cold water. Pour boiling water over the broccoli. Drain and rinse broccoli with cold water immediately. Combine additional ingredients with broccoli and pasta in a bowl and chill before serving.

Garlic Mashed Potatoes
Ingredients:
1 pound of potatoes (around 2 large), peeled and quartered
2 cups of skim milk
2 large cloves garlic, chopped
½ teaspoon of white pepper
Instructions:
In a small amount of boiling water, cover and cook the potatoes for 20-25 minutes or until tender. Remove from heat, drain and recover. While doing this, in a small saucepan over low heat, cook the chopped garlic in milk until the garlic is soft (for about 30 minutes). Add garlic/milk mixture and the white pepper to the potatoes. Beat mixture with an electric mixer on low speed (or you can mash with a potato masher) until smooth.
