Honey and Apple Pancakes
Ingredients:
Nonstick Cooking Spray
1 1/2 cup all purpose flour
2 teaspoons baking powder
1 beaten egg
1/4 teaspoon salt
1/4 teaspoon apple pie spice
1/8 teaspoon baking soda
3/4 cup apple juice
2 tablespoons honey
1 tablespoon of cooking oil
Instructions:
Stir together flour, baking powder, salt, apple pie spice, and baking soda in a medium sized bowl. In a another small bowl stir together egg, apple juice, honey, and oil. Add all at once to the flour mixture, and stir until mixed but still slightly lumpy. Spray a cold nonstick griddle or large skillet with the nonstick cooking spray. Preheat the griddle or skillet over medium heat. For each pancake, pour about 1/4 cup of
the batter onto the hot griddle or skillet. Cook for 2 to 3 minutes or until the pancakes start to bubble on top and the edges are slightly browned. Flip the pancakes and cook for 2 to 3 minutes more or until golden brown.
Makes about 8 four inch pancakes

Green Garden Soup
Ingredients:
4 cups of chicken broth
2 (10 oz) packages of frozen peas
1 cup chopped onion
1 cup chopped celery
1 small bunch of watercress, coarsely chopped
Instructions:
Simmer ingredients except watercress for 10 minutes in a covered Dutch oven. Then add the watercress. Simmer for five minutes. Puree. Season with salt and pepper and serve.
