Beef Meatballs


Ingredients:
Cooking spray
1-1/2 pounds of ground round beef
1/4 cup of finely shredded Parmesan cheese
1/2 cup of dry breadcrumbs
1/3 cup of chopped, fresh parsley
1/4 cup of tomato sauce
1 teaspoon of dry mustard
3/4 teaspoon of dried Italian seasoning
1/4 teaspoon of salt
1/4 teaspoon of crushed red pepper
2 garlic cloves, crushed

Instructions:
Preheat your oven to 400 degrees. Combine all of the ingredients except for the cooking spray into a medium sized bowl and stir it well. Shape the mixture into 30 (1-1/2-inch) meatballs. Place on a broiler pan that is coated with the cooking spray. Bake the meatballs at 400 degrees for 15 minutes or until fully cooked.

Makes 30 meatballs, with 5 meatballs per serving

Bean and Beef Burritos


Ingredients:
Cooking spray
1/2 pound of beef round steak, cut into 1/2-inch pieces
3 cloves garlic, minced
1 can (about 15 ounces) of pinto beans, rinsed and drained
1 can (4 ounces) of diced mild green chili peppers, drained
1/4 cup of finely chopped, fresh cilantro
6 (6-inch) flour tortillas
1/2 cup (2 ounces) of shredded reduced fat Cheddar cheese

Instructions:
Spray a nonstick skillet with the cooking spray and heat over medium heat until hot. Add the steak and garlic. Cook while stirring for 5 minutes or until the steak is cooked as desired. Stir the beans, chili peppers and cilantro into the skillet. Cook while stirring for 5 minutes or until heated through.

Spoon the steak mixture down center of each tortilla with an equal amount to each tortilla and sprinkle cheese evenly over each tortilla. Fold the bottom end of the tortilla over the filling and roll to enclose. Top it with salsa and non-fat sour cream (optional).
