Scrambled Egg Burritos
Ingredients:
1 cup egg substitute
1/4 cup shredded reduced-fat cheese
2 (10-inch) fat-free flour tortillas, warmed
1/4 cup salsa
Instructions:
Spray a medium non-stick pan with cooking spray. Over medium heat, cook the egg substitute, stirring it occasionally until set. Divide the egg mixture evenly between tortillas. Top it with cheese and salsa. Fold the tortilla in half. Serve immediately.

Low-Fat French Toast
Ingredients:
1/2 cup of skim milk
4 egg whites
1/2 teaspoon of vanilla extract
A pinch of ground nutmeg
4 1/2-inch-thick slices nonfat whole grain bread
Instructions:
Preheat the oven to 450 degrees. In a shallow bowl, combine milk, egg whites, vanilla extract and nutmeg. Dip the slices of bread into the milk mixture, being sure to coat both sides. Spray a baking sheet with vegetable cooking spray and arrange the bread on the baking sheet in a single layer. Bake for six minutes or until bread is lightly browned. Turn bread over and bake for 5 more minutes, or until it is lightly browned.
